It'd probably be an EP layered with a digital piano, to get that kind of sound, but then I'd have to listen to that track from Simply Red, which mum would be astounded over as I usually wind her up about it lol

I use a layer of
Bright Grand + DX7 Full Tines + SynthPad 1 (LP12 1,9kHz - 3/4 volume)
If you want an even brighter sound, you can also add a layer of "DX7II Fine Tines" sample
