Hi,
the Piano 5 has 2 piano layers, so there is no problem to create layered pop piano sounds. And it has 2 sample synth layers that you can add to the piano sounds or even use stand-alone. There are no hammond or other organ sounds (except for a pipe organ) you can download from the Nord library - all the rest should be available: APs, EPs, Clavinet, vibes, accordion, some synth sounds, strings, some basic brass. The only hammond organ sounds you can use on a Piano 5 are some user created fixed sounds - maybe better to control a B3 app on an iPad.
Of course, the NP5 has an EQ built-in. It's easy for you to verify: Either you have a look at the panel (as most features have a knob or a button - and if there isn't, the feature probably doesn't exist) or download the manual.
In relation to the Stage 3, the Piano 5 has quite some restrictions in the synth section, and it has no morph functionality - which would allow for shaping the sound during playing via a ModWheel, aftertouch or an expression pedal. The Piano 5 only has an expression pedal that would allow to control volume of selected layers. As far as effects are concerned, you should have about the same options as the Stage 3 - even an improved reverb section.

Thank you very much, I'd like to know, if you recall the beautiful piano sound I heard from that concert was not a Nord piano, like I initially thought, but a Nord stage 3. Another question I have, does the Nord Piano 3 have inbuilt speakers, so you can play it without always having to connect it to speakers? Many thanks. Kind Regards.
