I have an expression pedal that came with a Hammond XB-2 keyboard I used to have. It has a MIDI type connector but with 8 pins. I know it's not MIDI, but was wondering if anyone has ever made a converter for something like this? I haven't searched yet for any schematics, but if I could find one, I think I could build one up.

You'll probably have better luck finding a schematic for a Hammond product from some other source...

Doesn't that Hammond pedal have some active circuitry inside?
To add a standard exp pedal function, you would need to add a pot to the pedal mechanism and wire that out to a stereo-type plug, to keep both functions separate. I do not think that will be easy and I doubt very much that there is a magic plug converter from one type into the other. But! if you still think you might be lucky finding a pot in place already in the pedal, you could try (with the pedal disconnected and a tester) whether there is some triplet of connectors that behave like a "normal" expression pedal: (10KOhm linear behaviour (Roland EV5) or 50KOhm (Yamaha FC7) between ring and sleeve connectors and the tip varies according to the position of the pedal). Then it would be a matter of wiring the 8 din connector into a stereo plug. I do not not think you will be *that* lucky.
If I were you I would just buy an Yamaha FC-7 or Roland EV-5, whichever you prefer.

I tend to agree with you. Probably not worth the trouble. Besides, I see where these Hammond expression pedals are going for around $200. I think I will just try and sale mine and get the proper pedal.
