Hi.
I'm currently using my NS2ex as a master keyboard: I have a Korg X50 and a Korg X3R connected via MIDI cable (classic, 5-pin DIN), so I send them program changes and volume changes. I also have a tablet with MobileSheetsPro: when I select a score, it sends the program changes via USB cable to the NS2, which controls my two Korgs.
I'm thinking of buying a Yamaha MD-BT01 so I can charge my iPad during gigs without using USB A, USB C, etc. adapters.
Can I use the MD-BT01 with only the MIDI IN connected? The MIDI OUT is used to connect other keyboards.

No you can't, because the MD_BT01 takes power from the MIDI OUT, but you may use its USB version instead (UD-BT01) or the CME WIDI U-host https://www.cme-pro.com/widi-uhost/
But if for your iPad you use a USB adapter which has also a port for the power supply, like the Apple Lightning-USB3 adapter, you can keep the USB connection to the NS and also charge it...
