Midi question

Since its possible to have nord stage 2’s both panel’s 3 instrument sections on different midi channels, does that mean in theory i could connect 6 different midi controllers (on the different corresponding channels) via a midi merger box to the stage 2? And thus be able to get 6 different synths from one, in effect

Yes, but not 6 "synths", better say 2 organs (2 manuals of the same type), 2 pianos and 2 synths of course.
