Does this setting affect the velocity values when playing the Acoustic pianos?

No, it applies only to Organ section.

The thing is that for every sound, be it piano or sample files, which can be played dynamically, the processor needs a signal from high and low trigger to be able to calculate the speed of your touch. Only the organ is being played non dynamically like an old Hammond. I mean, piano sounds always have to use both sensors, otherwise dynamic won‘t be able to realize.
