Yes, it is possible to designate an external controller to play only the piano engine on one of the Nord Stage's 2 panels.
The Stage has two Panels - A & B — with one piano engine, one Synth, and one organ each. So you could have a Rhodes on panel A and use the external controller to play the acoustic on panel B.
The sounds can be changed with each program, and switching can be done via MIDI.

Caveat is that you can no longer have the organ/synth on that panel unless you want them layered with the piano
