I run my Stage through some really nice monitors and the grand pianos are off the scale good.
There is nothing preventing the Nord being as good for Rhodes Pianos.
There isn't much Rocket Science about setting one up, they are all much of a muchness, before you process the sound. Apart from the straight tine ones and the felt hammer ones, they are all pretty similar in terms of what comes out of the phono plug on the harp. If they get that right the rest of it will fall into place.

Have you never actually adjusted a Rhodes?
The differences in sound you can achieve by changing the angle and height of the tine relative to the pickup, and the distance of the pickup are HUGE - that is where the ACTUAL differences between Rhodes sounds come from.
I have two Mark I 73 Stage Rhodes, and due to differences in adjustment, they could not sound more radically different. One is almost Wurlitzer-like in its woody bark and bite, while the other has a much more bell-like tone. This is in the harp, not in any electronics.

If you can tweak the Eq to make it sound better, you should. It sounds great through my headphones but maybe through others it might need a little more or a little less treble etc. I use this Rhodes to play songs like Crystal Silence, La Fiesta etc. - one of my favourite albums is "Return to Forever" - and when I use this Rhodes I am very much in that "zone".
Sometimes I might set the Keyboard Dynamics to 0 instead of 1, and I'll often tweak the eq and the effects. A preset is just a starting off point I think and it's good to trust your ears and make adjustments as needed. If you like this sound then I recommend you use the "hold down shift and twiddle the knob" functionality to see what settings I used. That's how I learned from OrangeFunk's original "Chick's Rhodes" I talked about earlier in this thread. I mentioned it before, the huge, massive difference between this and my old Yamaha MOX 8 is that with the Yamaha I pretty much stuck with the presets it came with, and with the Nord, I wiped out the whole of Bank A and have pretty much filled it up again.

Sure - so starting with the Rhodes EP2 sound with whatever acoustics your piano provides (e.g. Long Release, Pedal Noise)
Velocity Curve / Dynamics - 1 (try it with 0 if it all sounds too amped for you)
Tremolo - Rate: 52 - Amount: 1.9
Amp: Twin
Drive - 3.1
Treble - +11.7dB
Mid: 3.5kHz +7.4dB
Bass: -10.8dB
Compressor: I have it set to 0 but if you found some notes unexpectedly loud then you can add compression to equalise the volume a bit
Reverb: Stage1 - 3.5

When I did this one I was trying to recreate the sound of the Mk1 Stage Rhodes that I used to share a house with about 15 years ago, so it's based on my memory of how that one sounded.
