yes Moog EP3 will work as expression pedal on Wave 2 (just select the right polarity on it, depending on the type you set in Wave2 system menu, Roland or Yamaha)
Regarding the sustain pedal, since Wave 2 can only use switch-type pedals f any type (both normally open or closed), it is really up to your preference

There are piano like models and simple foot switches. Ones with a switch to swap 'polarity' (electrically, it's not polarity but normally open or normally closed / n.o. or n.c.) or not - may be useful or another potential source of irritation.
If you ask on the forum, there will probably be a lot of different recommendations. Other than with expression pedals which differ a lot in usability for different tasks, I wouldn't see big differences for sustain pedals in general. They just need to stick to the ground - and none of them really does (unfortunately the Roland DP-10 with its rubber lip is a continuous model and won't fit).
BTW, I like the Moog EP-3 for fast movements like wah-wah.

Actually the DP-10 can work also in on/off mode, I use it like that on my NS3 (it has a switch on the side to set it as Continuous/Switch) and as you said its rubber lip makes it a very good option

I have a couple of Yamaha FC5 (now they are called FC5A) which I had for a very long time and keep working perfectly (as FZiegler puts it, they are just a switch). You can get "el cheapo" pedals for about 1/3 of the FC5A price, which look pretty much identical. If I had to buy a new pedal switch I would try the Nektar NP-1 (I haven't tried it myself, so caveat emptor!).
I'm new here and haven't yet purchased a Nord Wave 2, but I fell in love with it at Superbooth
I have a Moog expression pedal at home, would that work with the unit? Also, any recommended sustain pedal? I haven't got one yet..
I have 5 of these and consider them the best expression pedal, well made, on the smaller size, and detachable cable. The Yamaha FC4A sustain pedal also has served me well for many years-

I love the Moog pedals. They work on literally any keyboard it seems. Just replace the stock cable as it is trash. But the pedal itself is built very well.
