Complete MIDI documentation anywhere?

I know the manual has the CC# for the various parameters but it doesn't outline the values so I find myself poking around in the dark sometimes to find out which value range I need to use. Are the value documented anywhere? Like which values equate to which octaves for the "synth octave shift" parameter for example. I'd just love to have a more complete documentation of the MIDI implementation for the Stage 3 if possible. Thanks!

They are not documented, but you can easily find them using a computer/tablet MIDI Monitor app.

MIDI standard comprises documentation standards, but unfortunately, they aren't met by quite a number of brands. Like Nord. So you need to make your tests before being able to feed a Nord exactly the way it digests.
