I got a problem: I am not able to decide between the Nord Piano 2 and the Nord Stage 2. Unfortunatelly, money doesn't matter at this point - but the following question does: In how far is the Piano 2 the better choice regarding playing the pianos? This is important for me to know as playing the pianos will be the my main occupation. However, the organ sounds really convince me and it tempts me to have both the pianos and the organs in one instrument. Unfortunatelly, I read some information that told me that the action and the velocity reponse of the Stage 2 aren't that good for playing the piano as those of the Piano 2 because they are somehow adjusted to organ playing.
Can you help me by giving some more details?

Other than price (which I would say is fortunately not an issue for you!), and a bit of weight, the NS2 has everything good about the NP2 and more except for the possibility of someone preferring the NP's action... and that's such a subjective thing, the only way you'll know for sure is if you play it yourself.

I have the NS2 and if I was you I would get the Electro 3 61. See if you can find a used one on ebay! Key's mean nothing it's all about the samples. The organ is the best part of a Nord so it is a MUST. The synth section in the NS2 is very limited and this is why you should get the Electro instead.

The keyboard on the E3-61 is awful for piano (apart from not having enough keys), so if you got the E3, you'd still need another board to play it from (which is not necessarily a bad way to go). Though you still don't get the very best piano Nord has to offer, as the E3-61 does not have the more advanced key-down string resonance, cannot hold the largest samples that have the least stretching, and perhaps most importantly, don't have the long release function.

I'm of the opinion that if the difference between the NS2 action and NP2 action is so perceptible to you as to be a factor in the decision, you'd have to go play them to see. I can't tell a difference, but I'm one of those knuckle-dragging organists.
I would say that the NS2 synth section is not as limited as you'd think - yes, it's no modular, but it's pretty powerful for what you'd want to do on a multipurpose board like this. If what you want is crazy synth options, then you want a synth, not an electromechanical emulator that tries to nail classic sounds. If cost is no option, the NS2 is far more capable with only a few small differences in the piano section, but if the piano experience is paramount to all others, then the NP2 is maybe the way to go?
If money is no issue, buy both and return the one you don't like.

I have a Roland RD700GX and the Nord Stage 2. I find both actions great even though they are different. I do not see anything wrong with the Stage 2 action and I have been playing an acoustic piano for 50 years.
