This is a very interesting question! I would like to know that too. I was thinking maybe using DAW to do that but maybe there is a better way.

There are programs that allow you to automate the sampling process.
http://www.redmatica.com/Redmatica/AutoSampler.html
http://www.soundlib.com/samplit/
I'm sure there are more.
I don't have any experience with those programs - the only things I sampled so far didn't have midi so I simply recorded files for each note manually, normalized them and loaded them in the Nord sample editor.
When you do this, don't forget to name your files correctly! (C1,C#1,...,D#5,E5)
The wave files should be 44.1kHz 16Bit.
Listen to the files in the Nord sample library if you want to know about the sound quality.

today I tried to create a sound of electric piano, recording audiacity with each sample of a vst,
assigning to the various eighth c0, c1, c2, c3, F # 0, # 1 F, F # 2 F # 3 for example , 8 samples, but the sound and 'born, not the dynamics of the key, and the quality' is not the best.
Soon when I have more time I'll try to make things better.
But how to assign the different dynamics of sound to each button?
Because the sound only comes out with a dynamic?
