Another KBD Touch question

I mainly use worship, and I have gotten the impression that my KBD Touch for grand piano should be no higher than one, so I have been setting it to that, but then I switch to three and it sounds a lot better/fuller. Is there a right or wrong way to use these settings?

Not at all - the point of the KBD Touch, like any velocity curve function in a keyboard, is to customize the feel to your preferences. Depending on whether you're playing a hammer action or the SW keybed, the "appropriate" settings can vary even more. I for instance usually use the "2"/Medium setting on my NS4, which is an 88, but will turn off the curves entirely when playing an NS3-88 (which feels different), or use curve "1" on the Electro's. That's all for acoustic pianos alone. I have different preferences for EP's. There is no one right or wrong way. Even with acoustic pianos, the keybed action of a spinet-style upright may be much lighter feeling than that of, say, a Yamaha 7-foot grand, which in turn will be different from a Kawai upright, which differs from a Steinway concert grand, and so forth. There are differences even between Steinways of the same exact model, from piano to piano.

That definitely helps a lot. I was using zero for the longest time because i thought the higher settings were only for EP's, and then I switched it to two and it sounds way fuller and better.

That means that probably you tend to play with a light touch,which fits better with a lighter (higher number on Nord) curve because with it you can reach higher velocities more easily, but otoh in theory a light curve provides less control over low velocities (PP and PPP), anyway if it fits your playing and you are happy with it, just use it otherwise you should consider using some Compression to get a more full and even sound.
