No sound from outputs 3 and 4
I've checked the manual and it says alter the routing, but doesn't tell you HOW to do it and it's not terribly intuitive.
Could one of you clever people walk me through what I need to do to achieve this on my Clavia Nord Stage EX 2 please?

What exactly do you want to achieve?
Basically: Go to the System menu ([Shift]+[Prog1]), set Output Routing to either Global or Per Program. Then set whatever section (Organ, Piano, Synth) you want to Channel 3+4.

Thanks for the reply.
I want the sound to come out of 3 to be a "copy" of 1 and 4 to be a "copy" of 2 so I can route it separately. So...
I pressed Shift + Prog1 and the display is currently showing
"Audio Routing
Mode: Global"
I just don't know what to do from here.

Addendum:
Thanks to your instructions, I can now see how to switch the outputs for the different instruments from 1&2 to 3&4 etc.
Maybe I've just got it wrong and the Nord isn't capable of duplicating the outputs?

You can't do that, as also clearly written in the manual.
For each of the 3 sound engines you are able to chose to either send the sound to Output 1&2, to Output 3&4, to Output 3 only or to Output 4 only. There is no option to "mirror" Output 1&2 to Output 3&4

Not clearly enough. 
Thanks for the explanation. For some reason I could have sworn that I'd routed the output from 3&4 to my foldback in years gone past. I must have dreamt it!

You would need a separate device like a dual-channel splitter or DI box with link outputs to do that I'm afraid, going from Output 1&2 into the device and then send the split signal to your different targets.
Something like this one as just an example, there are many others available from different vendors:

Either you dreamt that or you did it with another iteration of Nord Stage. The 3 e.g. is capable of dual output (with limitations: no reverb on ch 3&4).

You can use the Headphones output as a copy of 1&2 (just add a Y cable)
