Hello! I was under the impression that you can edit the sound by the individual patch, specifically the Rotary Speaker settings. It seems once you make an adjustment, it's basically a global adjustment, does this sound correct? I'd like to be able to have individual rotary speed & acceleration settings by patch...is this possible?

Correct. That setting as any in Sound menu is Global (see NE6 manual)
