So I'm looking at the 1.1x version F manual trying to figure out how to create my own patterns, and it says very clearly on page 18 that pattern edit mode is found by pressing shift+program 5, which in the manual is labeled "Pattern".
Program 5 on my keyboard is labeled "Utility" and all it brings up is a layer swap mode.
How the heck is this possible?

On what OS version are you? You may need to update to the most recent OS version 1.14.
When they released OS update v0.86, Nord changed some parts on the panel print and in the way the buttons behave.
Panic function moved to Shift+Octave Up
Pattern Menu/Editor moved to Shift+Program 5
Phaser effect added to position 4 of Effect section
Vibrato Rate per-program setting added to Shift+Vibrato
Layer Swap function previously found in Utility menu moved to Page 2 of Layer Init "menu"

Ok, mine was still on .8x, and an update later and I'm making patterns like a ... pattern person
First impressions of the nw2 were pretty flat to be honest, but I've owned enough Nords to know this is pretty common... but in this case they reallllly punted on the presets, I flipped through about 70% of them and only a handful made me stop to explore.
Programming myself I can see the potential pretty clearly, but for players who are looking for more than a nice string or mellotron sample stacked with a generic synth sounds, the presets are gonna really limit their enjoyment I think.

I think we're talking about adding a NOTE VAULE to each step!!!
