Hi, I'm new and a learner. As I pick up basic You tube lesson I would like to be able to transcribe them into a music transcription tool and then change the key back to C (if I need to) to make it easier - I can always change the keyboard to the relevant key even though playing in C. I also want to buy transcribed music, Watermelon Man for example, and change it to C for the sake of simplicity. Can I get some feedback on this general question - thank you.

Musescore can be used in that way. There's an online Musescore community from which you can download other people's transcriptions in pdf or as a Musescore file. With the MS file you can edit it at will, including changing the key.

I've been using an app called "Transcribe" for years. I love it. You can change pitch, slow it down and see note recommendation. Lot of options with this app.

+1 for Transcribe. Cost less than $30 and is invaluable, especially for learning fast licks. You can slow them down without changing the pitch. You can also change the key, EQ the track, loop, much more.
