The Trigger Mode attempts to recreate the feel of an organ keyboard: With a piano, the sound isn't actually produced until the key hits the bottom. Due to the way the contacts work underneath a B3 key, the sound will play as soon as the key is depressed just a little bit, rather than all the way. (This is the "high" setting.) This means that you can use a different technique to play the organ differently, more naturally, than you would have to if the key triggered more like a traditional piano keyboard.

Similarly, due to its high trigger point and light action, if an organ key is played extremely staccato, it will "bounce" back down a little bit occasionally, briefly re-triggering a note after you've actually played it.

From the NE5 manual...

"B3 KEY BOUNCE turns the key bounce On or Off. When on the key off click is boosted if the key is released quickly."

OK since this was the first post Google showed up:
There are two settings.
On the Electro 5 (to access SYSTEM; press SHIFT-A. For SOUND, press SHIFT-C. Both are labeled in grey)
- System Settings 10(11): Organ B3 trig mode
- Sound Settings 4(15): B3 key bounce mode

By ear, the "Fast" B3 trigger mode (using the first key switch) seems to make a bigger difference on fast release.
This is real, mechanical bouncing of the key back into the first contact. You can suppress it by holding a finger at the "up" position so that it dampens the key on the last millimeter (as an experiment, not as a playing technique).
The double-triggered sound feels just right to me, BTW.
