Joel Cummins from Umphrey's McGee plays a Stage 88. That's all I know personally, but I'm sure there are more out there. And he's famous in my circles, but he might not be "famous".

Hiromi Uehara: in some recordings/ videos, she plays an Electro 2, in others, an Nord Stage, + always a Nord Lead 2 above her Yamaha piano + a Korg xxx...

I noted the keyboard player from Noah and The Whale is using a Nord Stage 2 (I think) on the video of Tonight's The Kinda Night

Jordan Rudess uses an Electro 3 and a Wave.
Trent Reznor of Nine Inch Nails and Jean-Michel Jarre uses Nord lead.

Derek Sherinian from (among others) Dream Theater uses a lot of Nord, but I don't think any Stages..
There's always Eyal Amir from Project RNL - if I mention his name perhaps he'll show up again!
