Playing a 5D without using preset programs

Just bought a 5D 61 and I'm wondering how to play the various pianos,Rhodes, surly, organs without using the preset programs. I had an electro 3 and would just pick the instrument and make my own settings and draw bars. Do I have to pick a program and just change the settings while in the program?

Also how do I assign a control pedal for say wah wah ?

I watched some you tubes but they just say what they are doing without actually showing what buttons they are pressing and in what order and sequence

I struggle with tech if I don't have clear instructions

You could try making a backup of the current programs with the Nord Sound Manager, and then just start tweaking them and overwriting.
As for the wah-wah, first connect the control pedal to the control pedal input on the keyboard, then turn on wah-wah effect (both LO and UP parts). Then just hold shift (in the Program section) and activate "Ctrl Ped". I don't have an Electro 5 but I think these are the necessary steps.

Use the Live mode buffers, that's what they are for, live editing independent from Programs (check the Live mode details in the NE5 manual)
