My bands play through PA, not individual amps:
If all sources mono, the soundscape is inherintly pointy and weak (in most cases) compared to even slight stereo nature. Panning is secondary, movement is essential.

Whatever the sound guy wants. He knows the venue better than you do.

We mostly play 100-300 seat venues, and most FOH guys run mono. I normally did when I ran it. You shouldn’t optimize sound for people in the center at the expense of everyone else. If someone has some ping pong fx then you can hard pan those.
