I don't think you're doing anything wrong, I just think you have the same issue as a lot of other Stage users: the lack of a good upright piano sample. :mrgreen:

I actually really like the Petrof Med 5.3.

And as for the Clav, it needs note-off samples, and perhaps the option to make it "sing" by hitting on the aftertouch (similar to how wobbling a key on a clav will make the strings start up again). But other'n that: monster.
