IR = Impulse Response but this is used mainly to model preamps and amps in digital FX stomps and VST, not for stereo modulations like the Leslie (afaik).

I don’t think they are using IR’s. Because they would have told us in big bold letters if they did
It’s the magic word these days. Just bought the new Strymon reverb with IR functionality. It’s really nice. So it would be awesome if they did though. Don’t shoot me, this is my assumption. And we all know what they are good for…

Impulse responses were the big thing in the late 90s, when convolution reverbs hit the market (prominently Emagic’s Logic plugin “Space Designer”).
25 years ago.
And then the amp/speaker sims hit with the Kemper.
I don’t see how a Leslie could be modelled with impulse responses, since an impulse, by definition, is as close to a single point in time as we can get — while the whole point of the Leslie is motion over time…

Since the Bigsky MX can load 10 second IR files, I was under the impression it may be used for sounds that take longer than just an impulse.

If I hear it well, he talks about Nord working to capture sound and also IRs from recording a real Leslie, then those IRs could have been used for comparing with the result of the Nord Rotary emulation algorithm and improve it for the NO3, not necessarily just as playback of those IR "as is".
Otherwise I'd expect Nord to put the "IR" word big in the Rotary section of the Nord Organ 3 specs (as you also @Afghanza noted before), but it is nowhere mentioned there.
