Hi Hlaalu! your explanation was clear, no need for the sketch. I just didn't consider about muting - unmuting chanels on the mixer during program changes.
Of course if you want to use organ AND piano and synth within the same Program, then it can become a problem.
This can not happen because the E4 does not layer or split... :(
They released a couple of years ago a Tall & Fat & Wide, which is the same as the Tall & Fat but stereo. Not the same as the Organ Grinder, but similar enough... expensive though for what it does in my opinion.
I wrote about it in a previous comment. The 2 reasons for not getting one is the higher price and the fact it is more subtle than the grinder and the sound of the second is the one that blew my mind. If the grinder came out in stereo I bet I couldn't resist spending some hard to obtain euros....

After I‘ve read the initial post again I have the feeling that the discussion moved a bit away from the OP‘s question.

wweiss, I try an answer:
- Stereo with only one speaker is not possible, if stereo for you means what it really is: left and right channel individually for spatial audio.
- If you intend to continue with one speaker only and your question is where to mix down the two stereo channels to one mono signal I would go from your Yamaha MOD with two TS cables (left and right) into two separate line channels of your mixer, setting the both panorama potis to left, and finally go with one normal XLR cable from your left main output to the one input of your speaker.
Then you‘re not losing any parts of the key‘s stereo signal, particularly the effect results such as stereo rotary, and won‘t risk any problems that may occur with split- or similar Y-cables.
Cheers from Germany, and stay healthy everybody
