If you want to be able to catch it better, try the soft release mode -- this makes it much easier to do so. Of course, it has some side effect too (I like the natural release better than the longer soft release).

That's right, natural release sounds are real release samples, soft release are just faded sound.
It is very obvious if you listen to it with some compression : standard release retain some frame resonance, soft release in comparison are much drier.

That being said, Nord sampled pianos all have quite short natural release, just like brand new pianos.
