I'm not quite sure if you want to record the MIDI data into an iPhone or iPad. If it's an iPad Cubasis 2 seems like an obvious choice - and it happens to be on 50% sale until January 9th. If you want to record into an iPhone, the selection is alot more limited, and there is no iPhone version of Cubasis. I have looked into a few options just now, and so far MusicStudio by Alexander Gross seems to be the best choice for iPhone, and it looks like it supports hardware MIDI out. The user manual also explicitly says that MusicStudio is compatible with iConnectMidi hardware, so I guess that would include iConnectAudio as well
I haven't tried the MusicStudio (yet), but it seems to get great reviews.
I'm not gonna go into details in discussing pros and cons of different MIDI sequencers for your Mac, since there are so many to choose from. One of the cheaper versions of Cubase or Ableton Live might be a good place to start (or Logic if your already used to GarageBand). I myself use Reaper, which is both really cheap, and has tons of possibilities and flexibility - and you can try it for free for 30 days (or more, I really don't remember), with no other limitations than a nag screen at startup. It can be debated however if Reaper falls into the "not too complicated" category...
since it probably has more settings and customization options than any other DAW... I like it though, and have been using it a lot for the last eight years or so - both in OSX and Windows.
