You mean the dynamics etc in the piano section? those are dedicated to the paino engine, they will have an affection only if you using a sound from the piano library. If you have chosen organ or sample synth they are inactive. I would recommend you to carefully study the manual and understand the structure of your keyboard. Nords are a little different from other boards in terms of interface, they are simpler with no deep menu diving and dedicated knobs for almost everything. That's actually one of the main differences with Nord compared to other boards.
With most other stuff You can do and play and tweak a lot without knowing anything. You use the manual only when You end up in trouble or need to do very advanced stuff.
But with Nord You actually should read the whole manual first in order to use the board.
Of course You can simply play the existing presets, but any tweaking will lead You to questions where You actually should have read the manual.
Probably an effect of the principle of having everything "on the board" instead of doing a lot of menu-diving like on other boards (where stuff is explained in the menus).
