When you are accustomed to playing the over-glossed, over-processed and over-engineered sounds from the other (mostly Japanese) manufacturers, the purity of the Nord library is distinctly different. The pianos are as pianos are supposed to be, including the imperfections. Aside from the few "amped" EP samples and (I believe) the tack upright, none of the pianos are processed. There is a realness to them, but you have to make them your own.

I guess some of us are just cut from a different cloth. That "rawness" is what attracted me to the Nord keyboards way back when. I was originally enamored with the EP sounds, as one of the samples sounds just like my old Rhodes. In the fundamental state, it had the same characteristics, so when I applied the EQ, amp and effects, it responded the same exact way. The AP's are similar in that each has its own personality, but it's up to you to make it your own.

Maybe some of the Nord sound require a bit more tweaking to make them yours, but the UI invites that tweaking in a way none of the competitors do.

There are official and unofficial videos on YouTube to help you learn a bit more about adjusting your sounds. Turn some knobs. Have some fun. Be patient and you'll be surprised what you can get out of the instrument.

I too felt as you do when I first got my stage 3. I was not blown away like I thought I should be for the $$$ i put out for it. What I've come to learn is that the Nord really does sound 'different" than most other keyboard
Something similar happened to me with my wave. I got it second hand and the sounds of the previous owner were not of my taste at all. I was surprised because I love how my E4 sounds and I had the same expectations for it's brother as well. As soon as I loaded samples of my choice and started tweaking, the power and the beauty of the instrument revealed!
Nord instruments are different from the other mass production brands, their sound has a special character. Some people love it, some others not. However, before you come to a conclusion you should spend some time tweaking and playing IMO.
