Is there anywhere online that I can audition / listen to nord patches without having to load them ?

Duh.

I've just visited the Nord website and seen they now have a "play" button next to every single sample / instrument.

It's been a couple of years since I visited the website and they never used to have this facility online.

That's true. Because you need the specific engine (of a Nord instrument) to load that program.
And that's the whole idea:"you need a Nord instrument before you can use the program".
So if you want to have a web-based program player, that would mean that you have to embed the Nord OS's into a website. I guess that's not going to happen...

That people/Nord website will make mp3 samples is just an extra service to give you an idea of the sound.
