I'm looking for a good program with which I can convert my improvisations into midi and play them back in more or less the same way.
I'm using Finale now, but that program turns out to be unsuitable. Finale apparently doesn't get along very well with pedal use and then often comes up with extra notes that I have to remove again.
I hope you have some good suggestions.

Finale is a notation program, not a DAW/sequencer, its MIDI support is meant to input notes to the music sheet, not record a performance.
So a DAW/sequencer is what you need, depending if you are using Win or Mac there are many choices, free or commercial (Waveform free https://www.tracktion.com/products/waveform-free or Reaper, Logic, Cubase, Ableton, ...).
