Moin allerseits,
eine Frage zu den Programmen: Wie kann man die Category ändern? Also ändern, nicht nur auswählen.
Das Verrückte ist, ich habe das anscheinend schon mal gemacht, finde aber im Handbuch keinen Hinweis.

Hello and welcome!

The "spoken" language on this forum is English. If you like you can use Google translate or any translating app to convert it from German to English.
And it's maybe good to specify which Nord you're using. Since there are 2 mentioned in your profile :D

Hi - to change the Category of a program, go to "Save As" and hold down button 2 which is labeled, "Cat" in the display, and use the knob to change the value.

You can change the category of a program as ajstan explained. You cannot introduce new categories, and you cannot change the category of a sample (if it isn't your own result from Nord Sample Editor and you still have the project file).

what's the problem writing in English?

To persistently write in German, even though you know that only English is accepted here, is a bit rude to all members who do not understand German, and will certainly not help you to get any help in the future. Therefore please take a note on it in future and stop writing in other languages than English, as a courtesy to others
