Unfortunately, this is a question that only you can answer.

My thoughts are that unless you are playing for a panel of Hammond/ Leslie aficionados, the vast majority of the audience won't know the difference.

The aficionados will know the difference regardless of whether it's Nord or Vent, but will perhaps forgive you based upon your stellar playing technique

On the setup proposed by ddeitch (routing the organ signals to output 3 thereby bypassing all internal effects), bypassing the reverb is one thing, but presumably you would also bypass the vibrato-chorus, which many would consider a key component of a lot of classic Hammond sounds (for example, C3 chorus + frequent fast Leslie is a major component of the sound used by Santana, Allman, Vanilla Fudge, etc.) Does Hanon_CTS or anyone know if vibrato-chorus on the C1 (for me) or S2 (for ddeitch) is a stereo effect? That is, is any of the vibrato-chorus effect lost if not tapping both right and left outputs of the C1 or S2?

Organ Vibrato/ Chorus is a monophonic effect as on the original tonewheel Hammond.
With the C1, I believe all effects except the Rotary Speaker sim are mono.
On the NS2, Effect 1, Effect 2, Delay, Reverb, and the Rotary Speaker sim are all stereo.
