The Nord single sustain pedal - does it have half pedalling?
Does anyone know if the official Nord single sustain pedal has the half pedal capabilities that the triple pedal has? Was thinking of getting one as a spare to bring along with me in the event that the triple pedal decides to quit on me during a show, and I'm hoping it just works the same as the triple minus the other 2 pedals.

No, it does NOT support half pedalling nor pedal noise. It's still good to bring a spare, but it will not be a 1:1 replacement of the sustain pedal of the triple pedal.

It’s a real shame that Nord Single pedal is just stupid on/off switch. If you buy for example NS3 SW73 you’ll get this pedal and you won’t have those pedal features what your instrument is capable of doing. So then you must go and buy triple pedal which is btw very bad chinese quality (I have had many and always one of them is broken). Other thing is that for some of us triple pedal takes too much foot space and we may use perhaps only sustain (like myself). So please Nord, if you read this, finaly give us a continuous dynamic single pedal!

My single Nord sustain pedal does not half pedal with my Electro 5D.
I don't think my keyboard has this function, but I don't know for sure.
I see a lot of half-pedaling sustain pedals advertised but when I read the reviews either it says it doesn't or, it does but does not list what make/model keyboard.

I got it back in 2017.
Maybe you think so but it doesn't, the single pedal which is bundled with the NS is a simple on/off switch (Fatar VFP1), so there is physically no way it can "half pedal".

No it doesn't, I thought it did but just checked again with less ambient noise etc...
I revised my comment and am wondering about the pedals advertised that say "half-pedaling", I don't think the E5D is capable, are any other models capable with a 3rd party pedal?

The sustain pedals are basically of two types: on/off and continuous (pot), the latter produces a continuous read of pedal position so this information can be used by a "piano sound generator" (HW or VST) supporting half-pedaling, but it all depends on the generator.
Nord Piano Engine supports half-pedaling on Nord Piano (from first NP) and Nord Stage (from NS2 on) families, but only with Nord Triple Pedal (which is not a standard continuous but a special 5 positions switch/resistor network, search forum for details) or via MIDI CC64. Not sure if latest NE models may support that via MIDI CC too, owners may try and test that with an external keyb or controller (or a computer) that can send continuous values of CC64.
