Up until the release of B-3X (and now VB3m) on iOS, there was a big advantage to using a Mac or PC for this, since the iOS organ emulations (e.g. the average sounding Galileo, the limited MIDI control Garageband) were not as good as what you could get on the computer (B-3X, VB3, B5 from Acoustic Samples, Blue3 from GG software, and others). And while you're right about iOS app pricing, there were also some decent low-cost options for computer. Also worth noting is that the VB3 for computer has substantial advantages over the new iOS version as well. B-3X marks the first and arguably only instance where you could get iOS organ as good as what you've been able to get on a Mac/PC.
I agree about stage ergonomics. If I wanted to use a computer rather than iOS device, I'd look at a Surface Pro, to make the experience more iPad-like.
