There is a 'sidekick' style switch that attaches nicely to a swell pedal such as a Boss FV500,used by pro organists for at least forty years.
They are available at TrekII (most likely made by....) and Tonewheel General Hospital.Michael at TrekII might include a cable on request?
I've used one since about 1980.They last for many years,on my second one now.Thirty dollars well spent.
Or just get a swell pedal off e-bay that was for a later console like the Hammond E100 or H100.Those pedals have a side kick switch built right in.
Treat yourself to a real expression pedal.....this Boss FV500 is fine,certainly no Hammond though.
Easily adapted for modern clone use.

Have you considered something like this? I tried it with my Nord Electro and I don't love the sweep curve, but in theory it should be a good solution.
