Gotta agree with Lefty. I play a digital church organ weekly, and while the FC7 closely mimics the long throw of a console’s swell pedal, i find that to be uncomfortable in a portable-keyboard configuration.
The Boss FV’s throw is only a little narrower, but just as expressive and more comfortable. The low-impedance version can also double as a duophonic analog volume pedal, in addition to standard keyboard expression duties.
Funny, I also own an FV30, and was surprised by its size while still retaining great pedal feel. It’s actually my go-to now if I need only one pedal for a gig.

Which Boss FV500 is recommended for organ swell, the H of the L type?

H or L are the signal impedance when you use those as volume pedals (audio goes in and comes out of the pedal). Organ swell is different than volume in the Nord emulation (e.g. it does not go to 0 and has some kind of spectral change in the sound as well as you increase the swell).
If your intended use of those is exclusively for the swell function, you would probably use the "expression" connector in the pedal (and I guess a TRS [stereo] cable). So H or L would not be used (a bit of a waste of functionality and money?).

Oh and the L is stereo when used as volume.

Low impedance = line level instruments, like keyboards...

Korg EXP10 is one I have yet to try.Alloy just like the Boss; and I would bet it's much like the Boss.No longer available new is the Yamaha FC9 which was a more robust build and stereo.
The Boss FV500L is my choice for line level stereo keys synth sounds or pads(send/return a mix) ,and use the CV function on the FV500H for an 'organ expression'(mono output3/Vent).
When not in use as a dual manual expression the Boss EV30 allows me to count or set the repeats/tails on delays and verbs, perfect companion for the Boss 'dual' series.
Pedal steel guitarists really like the FV500H,so does anyone that needs a smooth consistent taper to volumes.
NS3C NS2EX88 C2D Yamaha MOX8 Behringer Model D (5) Behringer Neutron (5) Roland Lucina AX9 12 Hammonds/Leslies.(BV/BCV/B2/3 A100's/M3/M102 etc.

Standing and operating an FC7 will have challenges not found on the FV500(L or H models) because of this.FC7 can be joined to make a pair.
Hanging a Leslie speed kickswitch off the alloy Boss feels sturdier than the FC7 ,which is challenged in the 'minimum volume setting' compared to the Boss.
Alloy is sturdier,if you fly a lot maybe plastic works for you.I love the low impedance Boss more for line level volume and the high impedance more for it's CV input.
Both worth the extra for feel, build quality.Even have the newer FV30 double CV expression pedal, small footprint, great little device to marry the B3 'manuals' of these Stage 3's!
Sorry Yamaha FC7,you're OK,just not as quality as the Boss and is reflected in the retail price accordingly. The Stage 3 tracks the Boss expression/cv better overall which is the deal breaker.

Thanks for all the replies. Apologies for taking a while to get back to you all.

Regarding the boss, does anyone have any comments on using it while sitting down (regarding angle and comfort)?

I play more often seated than standing and I find the FV500L comfortable to use also in that position
