So I’m trying to mimic the sound of hammers hitting the strings (much less the strings resounding; idk if that makes sense but bear with me lol) on my Nord Stage 3. I almost get that really dry sound by bypassing reverb and soft release (and the resonance effect) but it’s not quite there.
To give an example of what I’m trying to accomplish it’s like if you turned the release down on a synth slightly and when you tap it.. it sounds more staccato. I’m not trying to reduce it a lot to get that “fake chops effect” but it sort of give us a crispier feel to the board even though it’s not realistic. When I load a piano into the sample library i can kinda do it there but the quality of those keys compared to the huge grands in the piano library don’t even compare.
Is there an effects pedal that could mimic such a thing?

Have you considered making a dry (as on really dry, overdone) sound that is similar to what you want and then put that into the sample section and mix it in with a real piano sound? You could even take on of the Nord pianos, sample it and process it heavily, and make a synth preset with that? You can then use the volume balance between the piano and the attack sound to adjust the overall sound.

I don’t know how to process the Nord pianos heavily. Would that sound good?

Well, your original post suggested to me you already had an idea how to process (filter) a piano sound to get the sound you wanted.
I'm not sure exactly what kind of sound you're after, but if you want a more woody sound, e.g., you could also sample or maybe find somewhere an atonal sound you want and add it as a synth layer as an attack only.

Not sure I understand what you are going for. Perhaps layering a 2nd sound just for it's attack might do the trick.
There's got to be something in the synth section that might be dulcimer like, or something. From the synth section you can tweak the decay to get some real crisp attacks.
A couple ideas for samples to use for just their attacks...
Sample 149 for a tweakable bright Tack Piano kind of sample.

Good idea, however you should indicate the samples by their full name and/or Nord Sample Library download page link (memory position is no longer relevant in latest Nord OSs so other users may have them in different locations or not have them loaded at all).
