Nord Drum 3 Midi Pedal
I had this idea of attaching some kind of midi expression pedal to the 3p. And then being able to modulate the parameters of patches in real time while playing. Imagine an electronic snare and lowering/raising the pitch with some sort of foot pedal for a build up in a song. Is anything like this possible? Without a computer...and if so would it only be one parameter at a time or could it be multiple?

That depends upon the pedal. The Nord will accept whatever midi cc data is sent to it per the midi controller chart near the rear of the manual.
A Lake Butler CFC-1 or CFC-4 can do that very nicely, but those are in short supply these days. The available pedals on the market today are, I think, either garbage (the "B" word), or really great but expensive.
