Is it possible to create a sample in Nord Sample Editor that is triggered only after I release the key?
A clavinet release for example ...

No, not possible since even if you may think to achieve that by creating a sample with a "silent" loop followed by what you would like to be the "release waveform", according to NSE manual:
Loops are very useful in order to make a sample play back or sound beyond its own length. Loops will also reduce a sample’s size, since everything after the loop end marker will be discarded when you download a Sample Instrument to the Nord Sample Editor.
