There is something to be said for certain acoustic piano sounds you can get from a rompler keyboard, when you try to make that AP sound work in covers band situation where there is a lot of noises being made, and the struggle is to get all noises heard clearly. For certain songs I still use the base AP sound (001) from the base Roland XV-5050 synth (this AP sound is still available in my Roland FA-07). I don't even use any of the AP sounds from the Roland SRX-07 card (which is the EXP-02 in the Roland FA-07).
I know this Roland AP sounds bad when played standalone. It really sucks standalone. And on some songs the AP sound is too exposed, so we had to use something else.
I don't have any AP sound in my Electro 3 which can work for this song. Here is the Roland XV AP sound 001. The only modification I made was to give it a faster decay: https://www.youtube.com/watch?v=hVM9NHAFMFg

I know exactly what you mean, I ran into the same. I wanted longer decay.
An instant trick that "may" help is to use the compressor. It takes some dynamics away, but also artifially fakes more decay/sustain by pumping up low volumes. Sadly, the controls of the comp are pretty basic, but it might help.
For sampling - well usually you can use that on pretty much any other pro grade keyboard on the market, but the NS3 is quite weak with that.
The pianoengine does not allow loading custom samples. End of line. Nor can you edit any envelopes, which could help with that problem. End of line.
However, you can sample (preferably a max velocity sample set) from a Yammi and build a one layer (another restriction) synth-section piano with that. You can use the (again limited) envelope of the synth to control the decay, provided you have made a sample with looped sustainphase. You need to use the filter stronlgy connected to dynamics, to fake low and high overtones with piano and forte. I did not try that, I know it will take some hours of work, but at least the sampling management in the synth section is quite comfortable. Even looping can be done remarkeable easy in the computer-editor and you can play your edited stuff over the NS3 before loading it into the machine. I do not know how satisfying the outcome will be. It definitley will not "feel" the same as on the Yammi, since a lot of variation on lower velocities is missing, but at least it might be enough to have the basic sound for some musical fields in the band. This is all I can see what you can do.
The NS is no instrument to adapt it to what you want. The piano is predetermined, you have to accept it the way it is, changes only with FX possible, and the sample/synth section is way more limited than in other instruments, but very comfortable and easy to use. The options are narrow, the NS is good in its own field, but flexibility is not on the menue.

One other thing I just remembered and I'll look for a Program to share with you - I often use a layered set of acoustic piano and CP80 on my NS3, with various FX, EQ, compression, etc. Coming from an addiction to a decade or more of the bright Yamaha stage pianos, I was in exactly the same boat for a long time. After work or over the weekend, I'll look for some Programs to share.
