MIDI learn is something your computer software does; there is not much that Nord could implement in their devices to support this that isn't there already.
The way it works is that you set your computer software to listen for MIDI messages and start touching knobs and buttons and for each, you can map it to some function in your software. This is done entirely inside the software; the only thing you do on the Nord is just to touch the knobs.
What happens if you try this? When enabling MIDI lean on your software and touch a dial, knob or button, does it not see the movement at all? If so, it may be because you are either not in Global MIDI mode or listen to the wrong channel or haven't selected the right options in Extern, etc.

It's just me or anyone else think that Pedal Noise and String Ressonance could have their volumes raised? +6db it is still low, at least for me, in both features.

About the clavinet. I miss the "MID" eq so bad on stage 3... Is there a change to bring it back, Clavia? Come on guys, CLAVIa, CLAVInet ...ahn??

I am voting for the:
"CHROMATIC SPLITS: the ability to split the keyboard at notes other than just F and C"
mentioned by peterkeys88 in the first posting.
There are situation you can't use the C and F splits. Even the dynamic width doesn't help.
Clavia please think about.

A second wish point from my side:
- improvement of the NS3 acoustic samples like solo guitar, solo sax, solo trumpets.
The current quality of the instruments above is in my opinion on a basic level and below the Yamaha's, Roland's, Korg's ...

That has nothing to do with the NS3 specifically - the sample library is common to all of Nord's sample-based synths.

General LFO that can be assigned to the same morph assign parameters like the mod wheel and aftertouch and ctrl pedal (and LFO..).
