The wurlitzer is now under epiano 1 and I can't move it back to Epiano 2. I have tried restoring etc.

That's the new way Piano Samples are now organized, check the latest OS release notes: you cannot change that.
Epiano2 is for Synth Pianos only, Epiano1 for electromechanical such as Rhodes & Wurly; since samples are stored in Programs by their name, this change doesn't affect them.

There is literally nothing under the E Piano 2 category anymore. Is it supposed to be this way?

All typical electromechanical e-pianos (rhodes, wurlitzer) are now E-PIANO 1. As maxpiano wrote, all synth pianos are now in E-PIANO 2. So once you put a DX Rubba Rhodes or a DX Full Tines onto your NS2, they will appear in E-PIANO 2 automatically. If you have no such piano on your NS2, this category will be empty.
They will come up with some more stuff for that section - maybe we'll get to see those Gospel Classics soon.

I'm disappointed that Nord made this change and doesn't allow us the flexibility to place the EPs we want under the EP category we prefer. I never use a DX7 piano sound, but it was very convenient for me to have EP1=Rhodes, EP2=Wurli, making it easier for me to instantly get to the EPs I used most often.

I think the EP2 category will be populated when they release new pianos and the upcoming layered pianos, I would expect that to happen when the NS3 is shipped.
