Not an expert, but my quick read is that pressing a LIVE button sends a program change message, as one would expect. Your app doesn't appear to understand program change messages. It's not a Nord problem. You need to find an app that will change your presets in response to a program change message.
I think I have gear issues ....

Unfortunately, you can't get the Piano 5 to send a certain CC when changing program. Which the Stage can do. So either look for another app or do it the other way round: hit the button in the app and send a program change to the Nord; or get another MIDI controller (even foot controller possible - no idea how to connect a second USB device to your tablet and your app, though).
