I can't do layering like this / Elton John style?

Tony of Bonners does an excellent job showing users how to make that cherished EJ sound using a Nord Stage 3.

I don't think my NG can do the same layering, right? The NG only has piano with synth. Not three separate channels like the Nord Stage 3 has. Right?
