My simple advice for someone in your situation?
Buy a pair of QSC K8.2s or similar. Put them on a pair of poles behind you. You will be freaking amazed at how good you sound. I believe these units are the best bang-for-buck for this kind of situation. I have a wide arsenal, these ones in particular are a standout.
(Long list of sound gear omitted due to space limitations. That picture on the right is me playing a cr*p gig with a cr*p band and a cr*p sound guy, it didn't matter because I had great gear and I sounded GLORIOUS)
As far as FOH, go find a small mixer with a mono aux FX loop. Send the mono FX loop to the sound guy if he/she doesn't know how to deal with stereo. Use the main outputs of the mixer to drive your on-stage rig, and be prepared to enjoy glorious stereo all night long.
If it's a smaller venue, you can take matters into your own hands -- crank up your on-stage rig, and put the sound person to shame. It's a proven formula in my world. A pair of 2000w QSC K8.2s bring some definite game.

Funny thing with the stereo pianos is if you have to go mono, use the output without the mono feature. This means, if you go back to the original sampling session, effectively only using one mic from the stereo pair. One side of the instrument will be off-axis to the single mic, but that is still better sounding than the bass boost and comb filtered highs you get if the mic pair are just mixed into mono.
Oddly enough, I think Nords Leslie simulation needs to have both channels, even if merged to mono. It actually benefits from some phase cancellation or else it sounds lower midrange heavy and congested.

when running a stereo pair into mixer it will be crucial to ensure that the two sides of the stereo feed are panned hard left and hard right; if they're both down the middle phase cancellation will occur. perhaps this helps?

For those of you who don't have the easy "mono" button on your boards, yes, this is an issue. That being said, I've been able to coax decent mono sounds (APs, EPs. organs, samples, effects, etc.) out of all my Nord boards. NP4, NS3C, NP2 and my ancient NE4D. Just takes a little bit of effort. So, no, I'm not waiting for the killer mono AP sample, I've got what I need.
I think I have gear issues ....

Apologies if this is stupid or redundant question..to clarify what Pablo states above....
if I come out of DI box to mixer, do I go with two XLR cables to two separate channels in mixer, then hard pan to left and
right? Usually sound guy tells me single XLR to one mixer channel is all I need, but I've always thought i should send two cables to two channels.

mono is one cable and one channel, stereo is two cables and two channels panned hard left and right.
Your sound guy shouldn't be telling you anything. You should be telling him what your requirements are.
When we play where sound is supplied our stage plot lists 4-channels for keyboards. Two stereo feeds (a pair of channels for each of my two keyboards).

Ok.. yes that would be relevant. Just haven't dealt with a mono sound system in pretty much forever. Have been doing stereo literally since the 1970's, but yes they do exist.

The question usually isn’t whether the system is stereo, but how many channels are left for keys after drums, percussion, guitars, bass, and horns.

AndyM, Are you panning the left/right signals 100%? Don't know about the Nord, but I struggled with this with my Kurzweil for a while before I realized It needed to be hard panned. It now sounds awesome.
