you can use most binary pedals (up / down), but only for slow/stop vs. fast (either toggle or momentary). If you want three distinct options (slow / fast / stop), there is no alternative to the half moon switch.

Sometimes I am using the original half-moon-switch from Nord, but most of the time, I use the simple Sustain-pedal (Fatar VFP1-25) and modified the settings in the SYSTEM-MENUE of my Electro5.
Then you can use the pedal in case of piano-sounds as sustain-pedal, in case of organ-sounds as rotary-switch.
And - bye the way - the original half-moon-switch of my Hammond was very expensive, but the half-moon-switch offered from Clavia was terrible (!) expensive.
Handmade is ok, but a price +25% in comparison to the ORIGINAL is not ok.
And perhaps, the Crumar-switch fits as well!?

A double on/off DPDT switch may be used, provided you make the appropriate wiring to mimic the behaviour of the Half Moon (i.e. check what happens between Tip, ring and Sleeve of the HM connector in the 3 positions then wire the 2 switches to achieve the same behavior, Crumar's may be different so in general you may get that one or a generic one but you may have to rewire it).
The easiest case would be that Fast/Slow switch is between Tip (or Ring) and Sleeve and Run/Stop is between Ring (or Tip) and sleeve, but I don't have a Nord HM to check
