Hej Steve!

Well, on the Electro (3&4) you might create and load sample-based sounds with a "split".
But that will not affect the organ (B3, Vox, Farfisa) or piano (upright, grand, Clav, Rhodes, Wurly) parts of the Electro.
If you plan on doing "splits" a lot of the time you will also need lots of preparation and not being able to access the best parts of the Electro.

Myself, I would not bother to take that path. (I'm so happy with my Stage 2.)
But get the Electro - it's light to travel/gig with and gives you access to the wonderful world of Nord sounds! :D

NE3HP, NP88, NS2, DPP1, NL2X, NL2X, NLA1, NL4, NE5D, NW2 (Collect Them All?), some classic Rolands, Arturias, a Waldorf, a Kurz, a WONOK3, a pile of guitars, a P-bass, loopers, amps and computers ...
I'm a gearslut!

I would remark that, beyond being sample based (and 1 velocity layer only) the split point would be fixed.
Steve also asked if teh process is quick and easy: it is not, at least not as easy as applying a split on a keyboard that is built to support that feature (which is not the case of the monotimbral-design of the Nord Electro)

If splits are a key feature that Steve needs and he wants a Nord, he needs a Stage.

@stevewalsh - you seem to have NEARLY answered your own question. Keep the Roland workstation, buy a Nord Electro 73 and ditch the Roland piano instead! The Electro has great acoustic and electric pianos, organs and access to a wide range of samples, but it won't replace a GM-type keyboard simply because its sample memory is quite limited. Use the workstation for orchestral sounds, synth pads, percussion, whatever and the Nord for those all-important piano, organ and Mellotron sounds. The workstation can probably even do acceptable piano sounds if you need piano and organ at the same time.
