I'm guessing it would be something like if you select "Ensemble Strings" it will be a slower attack and closed filter with lower velocities and a quicker attack and open filter for higher velocities. The Decay would be set to sustain. For "Piano" the attack would not be affected by velocity, but the filter would be, and the Decay would be set to a piano-type amount.

Unfortunately I'm going to be the first to report a bug. I'm unable to select any audio output device. A reboot doesn't help. All other audio apps have the usual choices available but NSE3.0 only has <No Device>. A shame as I'm enjoying working so far, but was about to set up some loops on my samples but I can't as I can't audition them.

What OS are you using? I'm on Catalina 10.15.2 and I see the audio outputs and can select from all attached outputs.

I'm a bit disappointed - this is basically the old sample editor now at 64 bit. Given how long it took to release I was hoping for some more functionality...

I get the option for "Built-in Output (Core Audio)"

I am on a MacBook Pro (13-inch, 2017, Two Thunderbird 3 ports)
MacOS Catalina 10.15.2

Also works fine on Windows.

I'm also on Catalina 10.15.2, Mac mini 2018 i7.

I've tried deleting the app and redownloading and installing, along with another reboot, and still no output options.

The new sample editor looks quite good to me. I did a quick test with the sampled wav files of one of my Motif sounds and got to the final result very quick. Especially the loop function seems to be more intelligent as it needs much less manual tweaking and tuning than doing the loops with the old sample editor. It would be good though to be also able to export .nsmp files rather than need to use the old sample editor for this
