Hi there - I’m eagerly waiting for my new Nord Stage 3 which hopefully arrives tomorrow. I’m over 65 old time rock, blues and jazz player. And learning things the hard way just isn’t us older still guys like to do - done this enough times...
So my question is this. I ordered the 3 pedal pedal but learned after reading the Instruction PDF that I’ll need rotor, swell and program switch pedals. Nord online tutorials don’t actually make suggestions but do offer model numbers of some that will work properly.
Anyone kind enough to share their experiences buying pedals?
Will I be able to ‘reposition’ the single pedal that comes with the instrument for one of these functions?

You can use the single pedal to switch on/off rotor.
For Swell I use Roland EV5, and I´m very pleased with it.
Haven´t used program switch pedal - so can´t give you any advice here, but there´s a recent thread about in on the forum.

Yeah for Swell you can use even the cheap M-Audio expression pedal (though it isn't listed), or any of the listed pedals. Main difference between swell pedals (also called expression pedals for other keyboards) is their durability and weight. The Yamaha FC-7 has a nice balance between price and durability, is heavy enough to more or less stay put (some of the lighter pedals, like my EV-5, more easily move out of place by accident, not bad but for some people this is a problem). The Yamaha is also is the only pedal I'm aware of that requires, deliberately, a bit extra force to go from ~90% to the last 100% of pedal travel, which is very nice if you want to have a bit extra boost for that solo but don't want to accidentally use it all the time. This to me is a very nice feature for an organist. Not as useful for synth modulation, but it's a gentle enough difference that it become a quite nice extra dimension of performance. I will be adding one of these pedals to my collection soon too, I think. There's no reason to spend more money than you'd pay for either the EV-5 or an FC-7 on pedals though - more expensive pedals don't necessarily last any longer than these two which are sort of reference standards, and cheaper pedals like the M-Audio sometimes break sooner (but someone on this forum has been using a few of them for a decade or so, so, ymmv!). If you're new to the idea of swell pedals, though, maybe it's not a bad idea to get one cheap pedal to see if you even like the idea, and after that buy whatever you like. That way you'll always have a backup, too! I also recommend you pick up an inexpensive but good quality single sustain/damper pedal - the Nord triple pedal is nice, but it's large and heavy and you don't always need it when taking your keyboard to events unless you're doing solo piano for a set where the audience is quiet enough to care about half-pedaling and damper noise (I've *never* been in this situation, personally, except maybe in studio). Easier to carry a single pedal around and if someone spills beer on it you'll cry less.

I had to replace my Yamha FC-7 swell pedal after it failed in 2017.
I bought it new in 1990.
Went straight out and bought another FC-7. Obviously.

I use two Yamaha FC-7s, one for control and and one for swell.
I also got the triple pedal, so I use the single pedal that was included with the Stage 3 for the rotor.

I bought a second hand Boss FV-500L the last week for 60 euro. I think it´s one of the biggest and most stable pedal you can find.

I agree, I have also a one Yamha FC-7 but the Boss FV-500L is the definitive solution.

Another vote for the Boss model, a jack of all trades... not just expression, but stereo volume I/O too.
