I don't understand what you mean by stereo EPs -- Rhodes, Wurly, and Clav are all mono instruments, just like electric guitar. (The stereo tremolo sound of a suitcase Rhodes is a stereo effect added to a mono signal.) So the samples are pure mono, on the Nord just like in real life.
If you want a stereo EP, you need to apply a mono in/stereo out effect, which you can already do on the Nord. So I think this is a solved problem.
Now, the amp sim converting stereo to mono is a separate issue. I don't have a NS2, so I don't know if the amp sim is placed before or after the other stereo effects. If you apply a stereo chorus to an EP, and also an amp sim, is the stereo chorus converted back to mono? That would be annoying.
I also don't know without trying it if the stereo reverb will convert a mono signal to stereo, or will just apply reverb to the left and right channels individually, leaving the mono signal as mono. In the latter case, it won't help to activate the side speaker of the SS. But a ping-pong delay with a short delay time will work to activate the side speaker, so I would suggest using that instead.
